Taiwan citizens’ animal protein demand
significantly increases thanks to the developing economy and increasing
national income that results in the change of consumption pattern. The annual
meat consumption per capita in the Republic of China is increased by 1.35 times
in the past 30 years, from 62.89 kg in 1990 to 84.84 kg in 2019. During this
period, the total meat consumption ratio of pork was decreased from 59% to 43%.
Chicken is increased from 34.7% to 41%. Beef is also increased from 3% to 8%.
Throughout the estimation of price
elasticity, cross-price elasticity, and income price elasticity in this
research, it is observed that pork, chicken, and beef have slightly different
demand elasticities, but they all conform to the law of demand. When meat price
increases, consumers’ demand for meat decreases. When citizens face the
increase in pork price, the demand for chicken increases, both are in a
substitution relationship. When pork price rises, the demand for beef declines,
both are in a complementary relationship. When chicken price increases, the
demand for beef decreases, both are also complementary. Within our empirical
study on the income elasticity of meats consumption, we found that the elasticity
coefficient of beef is significantly larger than other meats. This implies that
the demand for beef will be apparently more than other meats when national
income increases.
Suppliers can leverage the cross-price elasticity of demand to grasp the relationship between demand and price changes, formulate a proper merchandise competition strategy, and prepare inventory in advance to fulfill market demand once an epidemic occurs.
